Rooibos ( "roy" + "boss" ) The Rooibos plant or Aspalathus Linearis is indigenous to the Cedarberg Mountains, which are 200 km north of Cape Town, South Africa. This aromatic shrub, which is often called "red bush" is a member of the lequme family. Many consume Rooibos for it's refreshing taste and health benefits. It is a caffeine-free herbal beverage, rich in antioxidants and essential minerals. Rooibos has a mild flavor and a soft, slightly citric sweetness. It is very low in tannins so it cannot turn bitter. A wonderful beverage to be enjoyed throughout the day, both hot or cold.

PROCESSING OF ROOIBOS Rooibos is planted in July and August and is then harvested from December until May the following year. Harvesting is a very labor intensive process since about 95% of all the crops are still cut using a hand sickle. The coarse structure of the rooibos plant poses certain restrictions on full mechanization of the harvesting process. The top half of the plant only is cut, leaving it standing about 45 cm. Tractors then transfer the cuttings from the field to the barn where the leaves and stems are further cut using either roller cutters or traditional tobacco cutting machines. The leaves are then spread out on a tea court to about 30cm thick and covered with sheets to allow for the oxidation process to occur. In a few hours the leaves turn from the green shrub it was in the field to a deep dark red colour The leaves are then thinly spread on cement courts to allow for solar drying. This usually is no longer than 3 days. This oxidation process is very critical and has to be carefully monitored, for it has a tremendous influence on the end quality of the rooibos. Once the solar drying process is complete the tea is screened to remove most of the stems and debris. Various screen sizes are used to sort and grade the tea, depending on the use and client specifications. Before any packing or shipping can be done the rooibos is laboratory tested by the South African Agricultural Board to determine if it is hygienically suitable for human use.
