China, the "cradle of tea", produces hundreds of varieties of black teas that are
unquestionably among the finest in the world. Black teas are fully fermented and
produce a deeper note, than lightly or non-fermented teas. The leaves, once
picked undergo a series of 5 steps known as the "Fermentation Process". It is
through this "process" that black teas gain their colour and characteristics.
In China black tea is referred to
"as red tea" due to the unique red colour of the liquor produced when the
leaves are steeped. China black teas are known for their low astringency,
exquisite aromas -orchid-like to chocolaty - and soft flavors - floral to fruity
to sweetly spiced.

Hong-Maojian
(Dian Hong-Yunnan)
An
excellent hearty black tea harvested and processed in Yunnan Province
China. It’s a broken leaf, but contains many golden tips as well as leaf
and bud couplets. The aroma of the dry leaf is sweet and earthy. The
infused leaf produces a deep red liquor and the flavour is hearty with
sweet fruity and earthy notes. This is a great morning tea, excellent on
its own, but hearty enough to stand up to the addition of milk and/or
sugar. |

MaoFong
(Dian Hong-Yunnan)
A high
quality big leaf tea processed into a fantastic smooth black tea. The
dry leaf consists of beautiful large golden buds and dark leaf couplets.
They emit an aroma of cocoa/”chocolatey” notes and sweet hints of fruits
(dried apples) and a slight “malty” note – very complex. The infused
leaf unfurls and has a slight red tinge to it. The flavour of the
infused leaf is smooth, sweet and rich with absolutely no bitterness.
The leaves may be infused several times. This tea is bold enough to take
the addition of milk or sugar, but some of the complexity would be
covered. This is a wonderful tea any time of the day! |

(STD-1110) Hao Ya B 2009
– Known as the “Burgundy of Tea” due to its superb bouguet. Our Keemun
is produced in Qimen County, Anhui Province, China. Keemun is a unique
black tea produced from small leaf green tea bushes unlike Assam’s from
India which are produced from large leaf tea bushes. Keemun is
harvested and processed towards the end of April, a little later than
most other varieties of China Teas. Keemun is lower in caffeine but is
full in flavour. The dry leaf is small and twisted in shape and produces
a deep red liquor. The flavour is sweet with a slight “plumy” note and a
hint of cocoa, with no bitterness. The flavour is strong enough to stand
up to the addition of milk and/or sugar. |

Gold Black Tea – An exceptional black tea from the ancient tea forests
of Yunnan Province of China. The leaves were picked from a government
protected tea forest in Yunnan Province along the Lan Chang River. The
tea trees in this region grow wild and are not cultivated or groomed.
The leaves may be picked, but the tea trees are not allowed to be cut
down or cultivated in any way. Most of the trees in this forest are over
100 years old and many may be closer to 1,000 years old. All the teas
from this protected area have an international organic certification,
because they cannot be “farmed”. Our Yunnan Gold Black Tea has been
picked and processed using traditional methods of drying, withering, and
oxidation.
